From 1860: The rise of tourism in the Riviera's economy led to the hospitality and restaurant sectors becoming a full-fledged economic sector.

  • 1914:

  • Creation of the "Practical School of Commerce and Hotel Industry" in Nice by an order of the Ministry of Commerce, Industry, and Posts, the 2nd hotel school in France after Thonon-Les-Bains

  • Initially planned at Quai des Ponchettes, the construction was abandoned due to the First World War.

  • 1916:

  • Inauguration of the school in Villa Guiglia, located at 65 Promenade des Anglais, on the site of the Women's Hotel School.

  • The school provides practical and theoretical courses in hospitality for boys, with scholarships granted by the Ministry of Commerce.

  • 1921:

  • Deputy Léon Baréty proposes to transform the institution into a national vocational school to meet the growing demand for trained personnel.

  • 1932:

  • Relocation to 144 Rue de France, in a modern building designed for the needs of a hotel school.

  • The premises include adapted educational spaces and, in 1937, a real application restaurant.

  • 1960:

  • Integration of the school into the National Education system, becoming a state high school.

  • The establishment is equipped with new facilities: an application restaurant open to the public and a modern collective kitchen.

  • 1993:

  • New location in the Arénas district, near Nice-Côte d'Azur airport.

  • The modern building, shaped like a "steamship", includes 35 classrooms, 11 kitchens, 4 pastry shops, 3 application restaurants, 8 guest rooms, and a dormitory with 154 beds.

  • Total construction cost: 193.6 million francs.

  • 2002:

  • Obtaining the "Lycée des Métiers" label.

  • The school is renamed in honor of Paul Augier, owner of the Negresco hotel and an influential figure in hospitality.

  • 2014:

  • Celebration of the school's centenary with events (meetings with 700 alumni, waiter competitions, etc.).

  • 2018:

  • Visit by the Minister of National Education Jean-Michel Blanquer, marking the national commitment to the school's excellence.

  • 2022:

  • Inauguration after 3.5 years of rehabilitation and extension.

  • Addition of new classrooms, pedagogical kitchens suspended between two buildings, rooftop and lounge bar, with state-of-the-art equipment.

  • The school is renamed Lycée Jeanne et Paul Augier, in honor of Mrs. Jeanne Augier, owner of the Negresco hotel and an influential figure in hospitality
